This natural ‘wonder ingredient’ is packed with impressive nutritional credentials – high in protein, naturally fat free and low in salt and sugar. They have created a selection of easy to follow, inspirational ‘family-friendly’ sweet and savoury recipes that will feature on the upcoming The Lake District Dairy Co. Quark website (launched May 2013 – LakeDistrictQuark.co.uk).

Fabulous Baker Brother Tom Herbert says: “Quark’s an ingredient that’s been hiding for too long, which is a shame because it’s so versatile, tasty and healthy. Quark’s a great fridge staple, something you can use for loads of cooking occasions. The British Quark made by The Lake District Dairy Co that we’ve been using is also lusciously smooth and creamy, making it easy to use and mix into dishes and pretty irresistible.”

His brother Henry adds: “There are so many easy everyday family meals that Quark is great for. (RRP £1.25 per 250g pot)

A naturally fat free dairy ingredient that has a deliciously subtle and smooth taste and spoonable creamy texture which is perfect for cooking, baking and mixing.

The Lake District Dairy Co. Quark contains NO preservatives or artificial flavours.

19kcals, 0.9g Sugar, 0.1g Fat, Trace: Saturates, Trace: Salt

Quark-Chicken-Tikka-Masala

QUARK CHICKEN TIKKA MASALA:

Serves: 4 – 6
Prep time: 15 mins
Cook time: 45 mins

Creamy and spicy, this delicious curry will have everyone looking for seconds and with less than half the fat of a traditional recipe, it could almost be allowed!

Ingredients:

  • 30ml sunflower oil
  • 250g onions, chopped
  • 45-75ml Tikka Masala paste (to taste)
  • 600g skinless chicken breasts cut into 2.5cm cubes
  • 400g chopped tomatoes
  • 30ml tomato purée
  • 15ml mango chutney
  • 100ml water
  • 250g The Lake District Dairy Co. Quark
  • Salt and black pepper
  • Chopped fresh coriander leaves, to serve

Method:

  1. Heat the oil in a medium saucepan, add the onions and cook over a medium heat for 15-20 mins until soft and golden
  2. Stir in the curry paste, then cook for 5 mins more to develop the flavours
  3. Now stir in the chicken to coat with the curried onions. Cook for 2 mins, then stir in the tomatoes, tomato purée, chutney and 100ml water. Bring to the boil, turn down the heat, half-cover and simmer gently for about 15 mins, stirring occasionally, until the chicken is fully cooked
  4. Once cooked, uncover, stir in The Lake District Dairy Co. Quark and then gently warm through without boiling
  5. Taste and season if necessary. Scatter with coriander leaves and serve with basmati rice and naan bread

Using The Lake District Dairy Co. Quark instead of double cream and plain yoghurt in this recipe means:

  • 35% fewer calories per serving
  • 60% less saturated fat per serving
  • 42% more protein per portion
