This is one of my favourite potato dishes, which I make once a week and takes only 10 minutes to cook. It can also be described as type of “shaak” in Gujarat, India. You can have it as a starter or as part of a mains dish, with some chapatis.
- 4-5 medium sized boiled potatoes (serves 2)
- 2-3 finely chopped chillies to taste
- 1-2 tbsp chopped ginger
- 1 small tomato finely chopped
- 3-4 tbsp chopped coriander
- 2-3 tbsp roasted and crushed peanuts
- 1 tbsp oil
- 1-2 tbsp cumin seeds
- 1-2 tbsp mustard seeds
- Salt to taste
Ok first get get a wok or a frying pan and heat the oil, once the oil is heated add the cumin and mustard seeds and let both pop.
Then add the ginger and stir for few seconds and add your chillies, tomato, coriander and stir well for few seconds again.
Add the crushed peanuts and again stir for a few minutes. Then finally add the potatoes and salt to taste… Stir well till everything mixes well and cover the pan for a 2-3 minutes.
Now its ready to be served and you can eat this with Garlic/plain Naan or chapatti (indian flat bread) or on its own.
