There’s no meal quite like marinated shrimp and herbs. Besides the fact that seafood is everyone’s favorite, this meal is relatively easy to put together and makes an excellent side dish or main meal. All you would need are a few ingredients, fire, and of course hunger.

  • 1kg of unshelled jumbo shrimp
  • Juice of 4 lemons
  • Half teaspoon of salt
  • Half teaspoon of black pepper
  • Half cup of olive oil
  • Chopped garlic and onions
  • Fresh and chopped basil, oregano and parsley (or any alternatives indigenous to your area)

Prepare the marinade by combining all the ingredients in a covered jar and shaking the jar violently for a few minutes (you could also choose to blend them; some people prefer the onions, garlic and leaves to be visible). Next, soak the shrimps in the marinade for about 4 hours – make sure all the shrimps are well soaked inside the marinade.

Prepare your fire, oil your grill and cut the shrimps into six portions before you begin to heat them. Grill the shrimp for only a few minutes, but bask them frequently in the marinade during this process.

Brush the shrimps with your marinade and sprinkle your herbs over the plate. This meal is best served hot.
