Recipe: Curried Crab And Prawn Parmesan Stack With Saffron Mayo

Curried Crab and Prawn Parmesan Stack

Thanks to The Grey Ox Inn for providing us with this recipe for a great Curried Crab and Prawn Parmesan Stack with Saffron Mayo.

Serves 4

Ingredients:

  • Small pinch of saffron
  • 2 tbsp warm water
  • 2 tbsp good quality olive oil
  • 2 good pinches of curry powder
  • 400g white crab meat
  • 2 tbsp vegetable oil
  • 50g butter
  • 2 lemons
  • 1 small onion
  • 2 cloves of garlic
  • 430ml mayo
  • 100g grated parmesan
  • 32 King prawns (fresh/defrosted)

Method:

(If you can make the saffron mayo the day before it will turn out even better than doing it on the day.)

Place a small pinch of saffron in to warm water and mix with finger

Crush the garlic, make it into a paste and mix into 145ml mayo. Add saffron water, a little salt to taste and good quality olive oil

Set your oven to 180c gas mark 4

Place the king prawns in lightly salted, boiling water with a lemon and bay leaf and cook for 3-8 min depending on size

Once cooked place into ice water and remove the shells and devein the prawns making a small slice down the spine and gently pulling it out. Place prawns in fridge

For the curry mayo, sweat off finely chopped onion and garlic until it starts to go transparent. Add the butter and once melted (but not coloured) add the curry powder

Cook out the powder for 2 minutes and add to the mayo 1/3 at a time mixing until one consistency, place in the fridge

Cover a baking tray with greaseproof paper. Now grate your parmesan cheese and sprinkle lightly in a round cutter (around 8cm wide) so you get a circle. Place in your pre heated oven  for 2 min and take out, run a pallet knife under to loosen and leave to cool, you will need 12 of these (and maybe a couple extra just in case!)

Now mix your curry mayo with your crab meat, it should be a thick mixture so it can stand on its own. Add lemon to taste

Time to construct

Place a circle dollop of saffron mayo to one side of the plate and place a tablespoon in the middle holding it at 45’ quickly and confidently move your spoon to the other side of the plate

On the other side of the plate place some crab curry mixture with 3 prawns around it and then a parmesan crisp on top, repeat on top of this crisp and once again only on the 3rd crisp put 2 king prawns

Finish with a lemon wedge
