Most foodies have a special place for seafood in their stomachs. Since seafood is one of the most expensive ingredients to cook, it is reverently used during special occasions only. Most restaurants are also offering seafood dishes to satisfy the cravings of families once in a while.

For home cooks, seafood such as prawns is getting more expensive and complicated to cook. While the expensive part is true, the cooking part tends to be an easy flow for people who know their ways in the kitchen. Also, seafood can also be cooked during normal days if the budget permits. Here are some prawn-tastic dishes that will ignite your family’s love for seafood.

Avocado and Prawn Pillows

INGREDIENTS:

  • 1 pcs. small avocado
  • 20g butter, softened
  • 1 teaspoon fresh lemon (juiced)
  • 16 large slices white bread
  • 250g medium prawns, cooked, peeled, deveined and finely chopped

INSTRUCTIONS:

  1. In a food processor, blend the avocado until it becomes a smooth texture.
  2. Prepare a bowl and transfer the avocado in it.
  3. Pour the lemon juice in the bowl and stir it with the avocado.
  4. After combining the juice and avocado, put the chopped prawns in the bow.
  5. Whisk well until they are combined.
  6. Add seasonings if necessary.
  7. The bread slice should be cut using a round cutter (8cm).
  8. On the slice of each, spread butter generously.
  9. In the center of the round, put 1 tablespoon of prawn mixture.
  10. Get another round of bread slice and lay it over the mixture. Make sure to put the butter properly.
  11. The edges should be sealed. Press them down with a spoon.
  12. Repeat the steps to use the remaining mixture and bread slices.
  13. The pillows should be cut in halves before serving.

Prawn Paella

INGREDIENTS:

  • 1 tablespoon olive oil
  • 1 tablespoon fresh continental parsley, chopped
  • 1 brown onion, coarsely chopped
  • 750g medium green prawns, peeled with tails intact
  • 1 garlic clove, crushed
  • 1L boiling water, about 4 cups
  • 2 teaspoons paprika
  • 2 vegetable stock cubes
  • ¼ teaspoon turmeric
  • 300g long-grain rice
  • 2 tomatoes, coarsely chopped
  • 1 red capsicum, halved, deseeded and coarsely chopped
  • Lemon wedges for serving

INSTRUCTIONS:

  1. In a large frying pan or paella pan, pour oil and heat it over medium-high heat.
  2. The onion and garlic should be added after. For 3 minutes, cook and stir the contents.
  3. Wait for the onions to soften before proceeding to add turmeric and paprika. Cook and stir again for another minute.
  4. Pour capsicum and tomato and stir them well in the pan.
  5. The rice should be added while stirring. Cook for another minute.
  6. In a heatproof jug, put the stock cubes and water. Make sure to stir well.
  7. Pour the stock cubes into the pan. For 15 minutes, cook and stir the contents.
  8. On top of the rice, line the prawns neatly. The paella pan or frying pan should be covered.
  9. Cook them until the prawns are curled and colored, and the rice is tender for eating.
  10. The parsley should be sprinkled on top of the paella.
  11. On the serving plates, put the paella and lemon wedges.

Barbecued Prawns with Avocado Pico De Gallo

INGREDIENTS:

  • 2 tablespoons olive oil
  • 30 large green prawns, peeled, deveined with tails intact
  • 2 garlic cloves, crushed
  • 3 teaspoon ground coriander

Avocado Pico De Gallo:

  • 3 tomatoes, seeded and finely chopped
  • 1 ½ tablespoons olive oil
  • 1 avocado, coarsely chopped
  • 2 ½ tablespoons fresh lemon juice
  • 1 small red onion, finely chopped
  • ½ cup fresh coriander, chopped

INSTRUCTIONS:

  1. In a small bowl, mix the following ingredients: coriander, oil and garlic.
  2. Prepare a plate and neatly arrange the prawns on it. Use a cooking brush and dip it in the oil mixture.
  3. The prawns should be brushed with the mixture evenly on all sides.
  4. Use a plastic wrap to cover the prawns. Refrigerate the prawns to cool.
  5. In another bowl, make avocado pico de gallo by combining cumin, tomato, ground coriander, avocado, oil, onion, lemon juice and fresh coriander. Mix them well by tossing.
  6. A barbecue flat plat should be preheated on high. Place the prawns on the plate and cook for 2-3 minutes on each side. Wait for the prawns to change color and curl before transferring them to a platter for serving.
  7. Get the Avocado pico de gallo mixture and pour it on the prawns.

Cooking seafood should not intimidate cooking beginners. In fact, most strategies in cooking seafood can be learned through constant practice and comprehensive reading. Mastering the art of cooking prawns will not only improve your status as a home cook but also make your family look forward to meal times.
