Just getting into summer grilling?

Want to debut your skills at an outdoor grilling?

Nothing says ‘summer’s here’ like a fabulous garden grill with tons of tasty, hot-off-the-coals snacks, a bunch of great friends and few chilled drinks. If you are planning to buy your first barbecue and want to invite your friends, but are afraid of serving and eating burnt soles, the following tips will help you.


Choosing a barbeque

Choosing the right barbecue depends upon what you are going to be cooking. If you are doing only burgers and pieces of chicken, you can opt of open grill. However, if you want to cook whole chickens, then you will need a kettle barbeque that comes with a well-fitted lid.

When purchasing your first barbecue, you have to choose between a traditional charcoal barbecue and a modern barbecue powered by gas. Charcoal barbecues are metal proof bowls in which charcoal is placed under a cooking grill. Charcoal barbecues are slightly difficult to handle, but they offer perfect flavor and aroma to the food. Gas barbecues are powered by propane or natural gas. Gas has the advantage of being almost instantly ready-to-cook. If you want to give a more natural taste and smoky flavor t the meat, choose charcoal, but if you are looking for an easy solution, opt for briquettes.


Lighting the fire

Before you start grilling, you need to pre-heat the grill. The simplest and safest way to start up a fire is to use ignition device to ignite the charcoal. To light the fire, place crumbled newspaper in the bottom end, fill it with charcoal and then light the newspaper. You can use electric starters or chimney starters to ignite the charcoal.

Before you put the meat on, you need to make sure that the charcoal is heated up and the temperature of the grill is right. The temperature is not ready, if the charcoal has not formed a thin layer of ash.


Choose the right meat

While shopping for meat, you need to be extra careful so that the dinner will not turn into a fiasco. Choose thin slices of meat, as the thinner your meat, the less far the heat has to travel to cook the middle. Ask the butcher to remove extra fat so that it will not burn. You can select from a variety of meats (chicken, pork chips, ribs or fish), depending upon your choice. Remember, different kinds of meat react differently to different levels of temperature and require different grill times.

You can also select from variety of vegetables and make vegetable kebabs, corn on the cob or grilled potatoes with caramelized onions.

Simple barbeque tips

  • If you want to mop or marinate your meat, do so for at least three hours prior to cooking. You can also marinate it one night before grilling. Overnight marinating not just tenderizes the meat and reduces the cooking time, but also gives a great flavor to the meat.
  • Don’t rush it and do not open the barbeque lid more than necessary. Keep the vents at least half open.
  • Place food that is quick to cook in the middle of the cooking area over the medium heat. This includes fish and vegetables. Foods that cook slowly (like meat and poultry) sear first in the middle and then move them to the sides where they will cook slowly.
  • Apply barbeque sauce on the barbecued food only during the last ten minutes of cooking. This will prevent burning of sauce and enhance the taste of the food.
  • Grilling time depends on the piece of meat, temperature and your personal preferences. With experience and mistakes, you will understand how much time you need.
  • Even on a clean grill, lean foods may stick when placed directly on the rack. Hence, oil your hot grill rack with an oil soaked paper towel.
  • Use a grill basket for foods that might fall through the grill rack or are too cumbersome to turn over one by one (for example, tofu, vegetables, fish, fruits etc.).
  • Once the meat or vegetables are cooked, remove them in a plate and cover them with a foil, for about ten minutes before carving so juices can redistribute evenly.
